Easy-Peasy Light Fruitcake Recipe!This is THE most delicious light fruitcake I've ever tasted and it's super easy to bake! I recommend lemon frosting, but any flavor will add an extra special taste sensation to the cake.
Ingredients: 250g butter or margarine 250g sugar 3 eggs 450g packet of mixed dried fruit 1 teaspoon vanilla essence 1 teaspoon almond essence 1 teaspoon lemon essence pinch salt 375g flour 1 teaspoon baking powder Half a cup of milk Method: Pre-heat oven to 150 degrees C (300 degrees F) Line the base and sides of a 20cm baking pan with baking paper. Cream butter/margarine. Add sugar gradually. Beat until light and fluffy. Add eggs, one at a time. Beat well after each addition. Add mixed dried fruit. Mix until well combined. Add essences and mix. Fold in sifted dry ingredients alternatively with milk. Spoon into prepared pans. Bake for 80-85 minutes. When cool, top with your favorite frosting!! |
